Start off by doing a single cat, (highflow)... Then take the glass packs off and put some good mufflers on it, glass packs are like the retarted child in the performance world. I would also run a h pipe in there somewhere too with a bung for tuning purposes.

First off your running two different types of cats which could be messing with things. Pull your plugs out and make sure all of them are actually getting spark and none of them are fouled. Did you install headers or are you still running stock manifolds? It is also possible that your O2's are fouled but that usually sends a SES light to come on. Need alittle more info on you whole set up and I can try to lead you in the right direction.

do you still have the o2's plugged in before the cat?
when you mention one high flow cat and one stock, it sounds like a jerry rigged setup that could end being any of a million different things.

When my friend and i were installing my lt's he had plugged the 02's in the wrong ones. Make sure you connected your 02's to the proper connection, my car also gad rough idle and backfired when they were connected wrong.

What parts exactly (everything) did you install just before this problem happened? If it was a full header/true dual install, there are several things that could be wrong.
How much of the work did you do yourself vs having a shop do it?
I'd go back over everything, checking plugs, plug wires, PCM wires (the ones that run right past the headers on the passenger side, sometimes they get burned after headers), and O2 sensors. I'd also try to get a scanner hooked up to look at misfires, fuel trims, TPS readings, etc.
We need more info on this one.....

rear o2 sensors have no bearing on the running condition of the engine.
if you didn't plug the fronts in, or they are burned or not operating correctly it would explain the problem.
also could have a major exhaust leak up by the header flange.
pretty tough to diagnose when we have such little info. and just because the SES isn't on doesn't mean there isn't something wrong.

It does sound like your front 2 o2's are maybe junk... From what you have explained though the exhaust system desperately needs some tlc... Start with what i told you and if that doesn't fix it then change out your o2's. You need to change it up anyway.

the o2 sensors are the heart of the EFI system.
you shouldn't have ******* been driving it untill you could plug them in.
YES your problems are likely due to your stupidity with the senors.
replace both sensors
clear the computer
see if it runs
