If they are the same length or longer, sure. From what I've seen in looking to buy used LS7 coil packs, the connectors look to be the same. So you just have to make sure they will reach! Since the coil packs sit right on top of the valve covers and one on top of each cylinder, you don't have the 3-4 different length wires like on older V8s.
I'm going with the ceramic-booted plug wires. Seems like I've seen them around for under or around $100 and plug wires are something that see a lot of heat-related abuse. Just need them to work so not a place to try to save a lot of $$ IMO, even when getting better stock stuff. Though the stock ones are pretty reliable in my experience. Just wouldn't buy used plug wires, myself.
I'll sell you some used wires though...in a month!

Here is a pic of a truck wire next to a car wire (this one came from a 2000 Corvette). The car wire is significantly shorter and will not fit a truck setup. The connectors are the same though.
