Suspension Set ups
What's your guys opinion on best Springs and Shocks for a reasonable price on a 2000 SS? Looking to lower it between 1-1.25 inches. But i've been told that the stock 2000's camaro run lower then the 2001 & 2002?

Totally depends on what you want to do with the car.
Best all around for the money IMO would be the tried and true Koni/Strano setup:

You won't find a better handling setup for cheaper, the car will ride great (firm, but not jarring, very BMW like).

If you don't feel like spending as much, you can go with bmr lowering springs and either koni str.t shocks or bilstein shocks. Neither of these are adjustable though. I run the bmr with koni str.t and I think they are a good all around ride.

Is the quality on them good for the price? How much do they run for?

I think they are, I mean it's pretty firm, but I also dead hook at the track too. I got mine for $309 on sale last year, but I think they're $400+ regular. You can definitely push it around turns more vs the stock shocks and struts, but it is a firmer ride, so you'll lose a little ride quality for better handling.
But if you want the best of both worlds, then adjustable is going to be your best bet.
