Any particular reason I couldn't use a NX kit....

From a mustang? I've got a buddie that has one he'd like to sell. It's the basic kit. Comes with the bottle, lines, activation switch, wot switch and so forth....

Any reason I couldn't use it in my SS?(other than the mounting problems)

no reason you cant, make sure you use the jeting for a LS1 kit.

The fuel rail fitting may be different, but all the rest of kit are basiacally the same.

Yep, as a matter of fact, before the LS1 kits were available nine ball converted a NOS (brand) Mustang kit to use on his Formula.

I'm new at this so be pantient....when you say "jetting" do you mean a different part or a particular amount of spray?

Jets are inserts that go on the nozzle. On a wet kit there is 1 for nitrous and 1 for fuel. The jets have different sizes of holes for tunning your air fuel ratios.
