What's a short block or long block?
I have been perusing the idea of a stroker and during my searching I have ran across short blocks and longblocks Whats the difference and which is better?
Also what do I have and how can I tell what I'm looking at for the future?

Yes a short block has the crank, pistons, etc. (lower end) assembled in the block. A long block is the same thing but has the heads bolted on (no intake or exhaust). It has nothing to do with actual size of the block. What you have is a complete engine.

Also, a short block may or may not have a cam installed. A long block does. It should come with everything except accessories (water pump, alternator, etc). Some even have intake manifolds. I would guss an LSx motor would not include the sensors (~$500 worth).

We had fun with this question when my son asked.
Popped the hood on a 1965 Caddy a friend and I bought for fun (it was topless).
Popped the hood on a friends 87 IROC.
Made him figure out the difference in what he could see then pulled the manuals for both of which he actually read. Not sure who learned more at that point...
Its a really good way to actually see what one looks like side by side so if you roll up to an older Caddy, ask them if they don't mind cranking up that thing they call a hood

So can you swap out the sensors to an Iron 6L 408? What about the LS1 heads. Would it be a bad idea to put my LS1 heads on a 408 (at least for a few months)? I'm leaning towards the 383 due to price, but I've see some specials on 408's.
I was thinking about buying a shortblock and slowly adding the parts to make it complete (AFR's, LSX intake, etc.)............then selling the LS1 engine and having the new motor put in my Vette.
What are used LS1's going for?

Yes the sensors should swap out. Yes the LS1 heads would work, but not at the most performance gain. Besides you probably already knew that where it would only be for a few months.

As long as it's an LS1 block, you can use all the sensors. The LS2 uses different knock & cam position sensors. Used stock motors are going for around $2k.
As for heads, AFRs are certainly worth the $. But, you can buy stock 6L heads off Ebay for ~ $300 & dump $1k into them & end up with a nice set of heads. That's what I did. But then for an FI setup like mine the heads aren't as critical. If you are building a hi compression spinner you will want GOOD heads.

both, check out ebay and the papers. I thought it would be a good idea as well to suppliment the cost, but I also had the same idea with my heads and havent sold them either. But a whole engine is a different story, you can put it in the paper and get the conversion market as well where the heads arent as marketable. Damn inexpensive forged bottom ends these days... its killing me to hold back.

Thanks.....I'll search around and see what I can find.
