Default should i change my fan temps?

I noticed my programmer gives me the option of lowering the temp at which my fans kick on, should i do that? are there any pros and cons to doing this?

Depends. Cooler is usually better, but some years when you run cooler it runs richer and adversley affects performance as they're pretty rich from the factory to begin with. My 2000 SS did not like it when stock, it became lazy, most likely from a fatter mixture. It can be beneficial when tuned for it.

Same thing goes for cooler thermostat. Seemed to be the thing to do for TPI and LT1, but LS1's don't like it as much, but then again cooler temp affects fuel enrichment on stock tune.

Try it, can't hurt, see if the car likes it.
