I've been researching this. Here is what I have found.
If you have an LS1 car (you do) the LG bracket is the best one to use, it's a direct bolt up. The UMI bracket is good, but some minor modification to the spindle is required.
Either of these brackets space the caliper farther away from the rotor allowing you to use the C5 rotor on your F-body. The bracket and C5 rotors are generally regarded as a good performance upgrade for the street or track.
At any point in time you can add the C5/Z06 caliper to either the stock F-body rotor or the above described C5 rotor retrofit. This is mostly a "bling" mod and has no real performance benifit for the street. The reason being the F-body caliper pistons are 44mm while the C5/Z06 caliper pistons are 40mm. The only change you will notice on the street when going to the C5/Z06 caliper is a slight change in braking bias to the rear. For heavy track use the C5/Z06 caliper may be a benefit due to the more robust casting of the caliper housing but for street use the C5/Z06 caliper is simply for show.
It is generally agreed that upgraded pads, Hawk HPS are the favorite, should be used with either caliper.
LG and UMI both sell the above mentioned items in an assortment of varieties. You can get brackets, brackets w/ rotors, brackets w/ C5/Z06 rotors or the whole package.
The only thing I don't like about the LG kit is the drilled and slotted rotor. I wish/hope that I can simply get a good blank rotor with this kit. As I stated above the UMI kit requires some modification to the LS1 spindle but has blank rotors. I believe the UMI kit works better on LT1 cars. Both kits can come with hawk hps pads and C5/Z06 calipers. These kits are good price concious alternatives to the aftermarket "big brake" kits.
Good luck.

I did the conversion a few months back. love it. here is a list of the parts you'll need. check www.frrax.com for the bobs style brackets. also the calipers listed here are not the Z06 parts so they are grey not red.

12530683 Wheel Brake Cylinder/Caliper LEFT FRONT CALIPER K
10445856 Brake Rotors / Drums RIGHT FRONT ROTOR

If you get the LG brackets, you can reuse your calipers, PAB, pads, spindle, hub etc... There is no cutting and it is reversable.
All you need to do is put a vette rotor on and bolt the bracket on. You won't even have to crack the brake lines.
To me it is the better choice. More info is here:

I think you would have to be doing some serious racing to need them, though. The LS1 brakes with good pads and cooling vents will give you all you would need for the street and some track work. If you need more braking than that, you may need a dedicated race pad.
Or are you getting them for looks?
