Default Adjustable vs non-adjustable torque arms

Looking at getting a torque arm within the next 2 weeks, and wondering what the advantages of the adjustable are. I know it allows you to set and correct the pinion angle for the car - street, drag, ect - but other than that, is there any difference?

Not really. Just remember if you change ride height or swap rears in the future, you'll wish yours was adjustable.

I'll be going with an S60 in the near(er) future, so I guess I should get the adjustable. How do I go about setting everything up right for a stock rear, on the torque arm?

it depends what pinion angle you want to go with, you'll take an angle finder and subtract the angle of the drive shaft from the angle of the rear end center section on the bottom and that will give you your total pinion angle
