who works at a chevy dealership?
What kind of a trade in value would my car bring towards a new car? It's clean, has all the bolts ons (if that matters) and about 80k miles.

+4568789 on this one... I would look for a private party buyer for it. you will get a lot more for it within the muscle car community than you will from a dealer who will mark it up and sell it anyway.

I have been looking at some new vehicles myself, and the dealers have been offering between 9K-12K for my 2002 WS6 with 75,000 miles.
And that is with me trying to purchase a $35k car.

Im actually a bit surprised they would offer that much for it, Quite a while ago I looked into buying a BMW and they would only give me 14k for my 01 WS6 with 46k miles...then I test drove the car and realized that my car would kick the $50k beamers ***. Not my kind of car anyway, rides too nice and isnt loud enough.

The dealership is going to get their profit, be it from overvaluing the trade-in but not budging on the price of the new car or going low on the trade-in and giving a discount on the new car. Whatever gets the sale.
