I hope you have a real cooler installed because that pan really doesn't do anything.
A lot of heat is produces during very slow city driving with a high stall converter.
I always suggest adding fluid until you are about 1 inch over the "Full hot" line on the dipstick with the engine OFF as that will get you very close. Then drive it enough to fully warm the transmission and with the engine running add ATF to reach the "Full hot" line.
Dexron 6 is now the factory recommended ATF, but you are unlikely to see any advantages over Dexron 3. Seems most of the pro builders use Dexron 3 because they don't believe the twice as expensive Dexron 6 has any advantages. If you shop around you can find Dexron 6 for about $5/quart which is then a good choice. But at $8/quart it is just too much. Dexron 3 and 6 can be mixed, so don't worry what you have in the trans now.

When you drop a stock pan, about 4-5 quarts will come out. So you should have 6-7 quarts available, maybe even 8.
Note: A completely dry trans and converter will take 11-12 quarts, but dropping the pan only drains less than half of that. Not at all like an engine.
