How much did your stall and driving change when going from 2.73's to steeper gears?

How much did your stall and driving change when going from 2.73's to steeper gears? Wondering how much of a difference was noticed. I'm actually going backwards from what most people do. I have 3.5's and am going to 2.75's. My stall is a 3500 and i'm having it tightened up to around 2700. Trying to figure out if the setup is going to work as well as I think it is.
My current stall goes to 4000 rpms on 5psi of boost and I feel that is too loose. I left off at that point but boost was still climbing.
