Default Jetting set ups?

I've seen some tuners do their jetting a 50/50 set up like 74 primary and 74 secondarys and they do this method on all cars they've worked on and tuned on dyno,why? Why not going with 6 steps or 8 steps between primary and secondays jets? Just wanna learn more about carbs

they are deleting the power valve and that is for a track only vehicle, it will foul out plugs on the street and cause poor fuel economy as well
