Take off the bellow from the throttle body to the air lid. Have a friend step on the gas till it's floored (obviously the car has to be off). Make sure the throttle is opening all the way. Maybe during the wreck the throttle bracket was bent and there is now excessive slack in the cable.

If there is a tuner local that could log some time on the car and give you an idea what it could be but checking the throttle blade is a good idea. Pull a couple of plugs and see what they look like. Does the car have cats? That is something else to check. Usually can tell by the temperature if they are plugged.
