Default 1979 ford supercab swap questions

I'm planning on building a 70's ford supercab into a mild offroader, hunting wagon, family camping rig. I want to be able to drive this thing long distances on the road, so it has to be reliable and have plenty of power.
I'll be running 38"-40" tires and one ton axles.
I'm on the search for an engine/trans combo now. What would be you're recommendations for my swap? I've been reading and searching, but haven't really found the answers.
I was thinking a 6.0 with a 6l80e would be the best setup and cheaper than going with a 6.2. Or should I stick with a 4l60/80e?
What donor do I need to be looking for?
I want to be able to adapt the a/c from the donor too.

Thanks in advance for any info.

It will be somewhat like this. Way better looking though!

I would be searching for a 3/4 ton pullout. 6.0 4l80e. Relatively cheap, the 80 is gonna handle the abuse of big tires/drivetrain stresses absolutely stock. A mild cam/headers on a 6.0 will make solid 400hp reliably. Obviously you could mod from there for more power if desired.

I'm thinking the same thing. The 6l80 would be nice from the research I've done, but it looks to be a lot more work and expensive.
