Are you looking for stuff you can pull out, then put back in? Or more perminent stuff? If you're ok with it being perminent, check out the weight reduction sticky, its great! I've already shaved about 270 lbs out of my car, I'm hoping to have about 450 out by race day next month.
If you want stuff you can pull out, then put back in afterwards, go for things like
Rear seat
passenger seat (good 35-40 lbs right there, depending on what seats you have!)
Interior plastic panels, although, they're pretty damn light, but hey, every lb counts
Spare tire and jack
Any crap you have in the car. You'd be suprised how much all that stuff weighs. I took out over a lb worth of spare change alone from my center console. Remove anything from your trunk/rear seat area that you've been packing around (hell, most tracks MAKE you do this anyways, for safety reasons)
You can also remove your front sway bar, then re-install it afterwards. Its 15lbs right off the front end, and will also help improve your 60ft time. Just be careful driving to/from the track. No high speed cornering!

I'm only about 160lbs. Matt's girl would probably be a better choice though.
LadyDriven covered most of it.
What exhaust are you running? The reason I ask is with my stock one I can drop 25-30lbs in about 2 minutes. I had a flange welded in right before the muffler. Loosen 3 nuts at the strip and muffler/pipes are on the ground. I can show you if you want to check it out.
