The driver's side is easy... You take off the stock steering wheel and replace with one of your choice. Put a 1 or 2 ohm resistor (I can't remember which) in the airbag connector to keep the light from coming on.

The passenger side is more of a PITA to remove. You pretty much have to disassemble the entire dash to get the airbag and bracket out. There isn't a lot of weight to be lost, either. You need to make darn sure you really want to remove the airbags and consider all the consequences before doing so. If you ever go to sell the car, a lack of airbags is going to cause you all sorts of problems. Plus, the obvious safety issues if you're ever involved in an accident.

I have no airbags in my car, but I also have a 6-point rollbar, a harness, and very rarely drive the car on the street (even though it is still tagged and insured).

I guess you could keep the stock steering wheel, but it will look stupid without the airbag on it. You'll want to install an aftermarket steering wheel.

I'm not sure where the actual sensors are, but there is an airbag "module" underneath the console, just behind the shifter. That can be removed if the airbags are gone. Just be sure you have the battery disconnected (and leave it dosconnected for a few hours before you start) when messing with the airbags.
