stock fan problem - what is it supposed to do?

pretty high. first stage(one fan only) is like 217, and the second stage(both fans) is 227. they kick off about 10 degrees lower than the on temp. the fans come on with the ac also, regardless of temperature. before I reset the temps on mine they would not come on at idle w/ ac off and the temp guage would sit at 210.

Stock LS1 fan settings are:
Low speed on @227/off @218
High speed on @235/off @228
Low speed on @227/off @218
High speed on @235/off @228
