A/C Help!!
I've had my 98 Camaro for years and just recently when the A/C comes on the air is only slightly cool. I did a static pressure check (engine off) on the valve located on the big silver canister (please excuse my ignorance) which I believe is the low-side pressure it registered about 110-120 psi. This seems high, but I need some advice before putting any refrigerant in or proceeding any further in any way.

You should not be checking the static pressure. You want to check the pressure while the engine is running and the A/C is on. I don`t remember the range offhand, but I want to say the low pressure side should be between 25 and 35psi?. I have no idea what the high side should be on a 134a car, I don`t have a full set of gauges for 134a so I never checked the high side.
