Default Coolant light pop

So I had my low coolant light pop on me twice on the way home from work today. The 1st time it popped I got out and checked for leaks (didnt find any) then I restarted the car and the light was gone but came back after a few minutes. The motor never got over 210* and I am waiting for it to cool down for so I can check the radiator but the overflow was full. Why would it pop if it was full? And I havent messed with the radiator in a couple of weeks and I have never had a light pop on me. let me know what you guys think.

See what the fluid level is in the radiator after it cools - the sensor is notorious for going bad, some people just unplug it to keep the light off.

So i just checked my radiator level and it was about one row down from the top, but that is where it usually sits whenever i open her up. Where exactly is the radiator level sensor located so that way if the light keep popping i can unplug it?
