How interchangeable are the stock exhaust setups between years?
Say, a 2000 Z28 and a 1999 SS ?

98 & 99 are the same.

00 they changed them a bit & the pass side exits in a dif place. drivers is the same.

Are you referring to the manifold and ypipe setup or just the catback?

Like s346K said 98-99 manifolds and Y pipe are one style and 2000-2002 have different manifolds and Y pipe.

Well the only thing that NEEDS to be changed is the driver's side cat. I'd like to have the passenger side cat done also just so I don't have to worry about that one breaking too. And I've read that if you need to get one replaced, it's better to just do both.
I was trying to avoid a huge bill because they car has 160K miles, but if it won't fit.. oh well.

I got my cats used here and they were pretty cheap used, I just went and bought a used Y pipe and went to the cast exhaust manifolds too switched everything over to the 2002 it was way cheaper.
