Default why 3" y-pipe

Could someone please explain why you need a 3" diameter y-pipe? I mean if your exhaust is on'y 3" in diameter, then why would you need 3" with half the gas going through it, because after the y-pipe it will be restricted, and the stock y-pipe must flow more gas than the exhaust if you add up both sides anyways. Also, which are the best headers for the bucks?
