Default whats wrong???

Well I decided that today was the day to get my car out of storage since I was off work for the day. Anyway over the winter I did a cam swap and Longtube install on my 2000 SS. Started it a few times over the winter to hear my mods and everthing was fine. Took the car out for the first time and started driving it and noticed that the coolant temp on my diablo was way to hot because I have the fan # 1 set to turn on a 185 and #2 at 195. the temp was reading 209 so I wheeled the car to the side off the road and discovered that the overflow was overflowing Let it cool down to about 170 and limped it home, not before it started to rise again around 211 I made it home. after It cooled I went over things and found nothing everthing is pluged in and in order the rad is just full and the overflow is in the hot area and all the rad hoses are hot. With it running I can only make the fans come on if the ac is running, with ac off and the temp won't go below 200. The fans don't come on. I have checked the two fuses they were fine and replaced the three fan relays so far. any ideas????????

Im sure its not the stat sticking because the line from the bottom of the throttle body is dumping fliud into the rad. I can see this with the cap of once its around 180 or so. Shouldn't be sticking I don't think right? its dumping fliud and its taking it somewhere.

Go with the 160* stat. I have seen this happen alot after a cam and/or heads install. start the car with the cap off and make sure the radiator is full. let the car run and push out all the air pockets out of the motor. just keep filling it for about 10 to 15 min. That usually does the trick.
