Would you recommend a non-adj valvetrain for this setup?

Strictly a race car

Iron block, built for nitrous. Will be changing cams at least a couple more times. Comp R Lifters. Would Jesel non adj rockers be suited for this application?

Not with the Comp R lifters. Maybe you can shim and get away with nonadjustables.
