Default low oil pressure stumps me.

I have a 2002 camaro z28/ss police intercepter with 135xxx miles on the engine. I have replaced my oil pressure sensor and oil pump with a melling hi pressure oil pump. Torqued everything down to spec and replace the oil pan gasket. Valve cover gaskets and intake gaskets. My oil pressure reads 35-40 when cold but drops to zero on the guage when hot. There are no knocks or ticks or anything when this happens but is parked do to the seriousness of this issue. Also my volt gauge stays pegged out when running and goes down to half when car is off. Any ideas?

I replaced the o ring with the oil pan off and was extra carefull and lubed the oring prior to install. It had this problem b4 all repairs also

First thing I'd do is put a mechanical gauge on it. If you have other gauges acting funny I would put the mechanical gauge on to eliminate anything external of the engine.

I have heard of multiple places to put a mechanical gauge which would be easiest
