using 72 cc heads, what style pistons should i use to get around 8.5:1?

On a otherwise stock bore/stroke ls1 with 317 heads, you'd need about -12cc to get an 8.5:1 comp ratio. You should post up all your info for a more accurate response.

4.125 bore 4" stroke..427. heads will be ETP 41 ls7 heads
