The T-Stat is there to assist the engine in keeping it in its correct operating range and to help for a quick warm up.

Even in the SBC.. it was recommended. Without the T-Stat there was no restriction in the flow of the coolant and the heat didn't have enough time to transer into the coolant. Many had used gutted T-Stat to cause some restriction in the flow.

Depending on what operating temp your engine runs best at, you need to make sure that you keep in it that range. Running with or without the T-Stat might or might not help. Electric pump usually stays at a constant flow taht is good heat transfer from the block to the coolant.
