Default Oil

I am a bit mixed up here. I have been using Mobil 1 5W30 since I have had my Z. I see others in here using 0W30 and 10W40. Are the use of different weights dependant on exactly what maker of oil one uses? I see a lot of people use Amsoil 10W40. Why not Amsoil 5W30? Is there an advantage to the thicker weights? I always assumed the thicker weights would make your engine work harder.

I use the Mobil 1 15W-50 as it has more anti wear additives. Plus Mobil says it is recommended for high performance vehicles.
