I'm finishing up a similar build in my vette, previously had a 244 248, 61x 61x 114 cam and ported 317 heads w/ FAST 90mm. Swapped for CNC ported LS3's, stock LS3 intake and a low 250, low 260 .630 113lsa cam. Previous setup dynoed between 519-490 to rear wheels. I daily drive my car so hopefully the new cam is doable and I'm hoping to be in the same 520-535rwhp range.
You mention good power down low but the stock LS3 intake and CNC ported LS3 heads are kind of meh in the low/mid range. The cathedral port stuff really does well down low. Personally, I don't mind giving up some power down low as it was already way more then street tires could handle and also was at times unruly. Like giving only moderate throttle and breaking the rear tires loose at 60mph while merging onto the freeway.
