Default ls2 engine cooling

I have a 1957 Nomad Wagon that has recently had an LS2 engine dropped in it. This was bought as a complete package , Trans, engine and electronics , and radiator. The first time I took it out the engine got to 228 degrees while at idle with the a/C on on a 100 degree day. The cooling fan was on and temp was continuing to go up. Coolant over flowed. The pressure cap was 13psi. I changed it out to a 16 psi cap. I took it to a radiator shop that had been recomended, they said the coolong fan was not moving enough air @ 1250 cfm. I replaced it with a 3400 cfm fan. It was a direct swap except for the larger fan motor. The added draw of the fan blew the fuse in the cooling circuit. Before I make a mountain out of a mole hill how hot is too hot and just changing the pressure cap to retain the coolant be enough? Should I put the 1250 cfm fan back and see what happens? 228 degrees just seems too hot to me. What do you think?
