So I've noticed that my mileage isn't that great, especially since its a v6 (around 18-20 mpg mixed) and it also sometimes takes awhile for my car to heat up and sometimes awhile before its really hot, so I'm wondering if maybe the previous owner put a 160* t-stat in it or maybe the stock one is going bad? Doesn't seem right to be getting that bad of mileage and only getting about 250ish miles per tank. Any other suggestions?

Lots of things can cause poor fuel economy. But if it takes a long time to get heat - change your stat. Good place to start.
