Default Normal running temp for 5.3?

I have a swapped 5.3 in my T/A and I think its running a little too hot. at least it is for my liking. I have no t-stat and its been running at 210. Granted, were starting to get into summer so its going to run hotter than before but Is this too hot? when I first finished the swap a few months back it wouldnt ever go over 180. Im using an LS radiator with a single third gen fan. I dont think the fan is the problem since Ive been using this fan with two previous engine and never had a problem.

I did pull the radiator a few weeks ago to install my new trans cooler and that might have something to do with it but I really dont remember if it was running this hot before that.
