Default Is my radiator too good? Temps drop on the highway

Hey guys hope you can help....

So i've recently finished my install and i'm having some heat problems.

Whenever i'm parked up - car gets up to temp fine and my rad fan (in front of the rad) kicks in with no problems.

As soon as i get up to speed, or on the highway the temp drops right down, and the temp drops to about 100F (or about 40c).

The rad is a aluminium, I've bled the system and there's no air in it, what could be causing this? Is my radiator just too good?
