Question Intake Gasket Thickness, Does it Matter?

Hey guys, quick question:

I'm replacing an intake manifold gasket and I want to buy a Fel-Pro gasket.
They make them in .030 .045 and .060 thicknesses, whats the difference? Why would I choose one over another. Is there one better then felpro?

At the same time I will be replacing knock sensors and harness (will make an rtv dam around knock sensors), cleaning injectors (out of the car on an injector cleaner of my own design), installing new O2s (bosch 13111s for ma longtubes), grinding my k-member, and a couple other small things, maybe an ls6 cam and springs if i can find one cheap. 98 TA with LQ9.

I want to get everything right the first time and not have to re-do anything, any tips or tricks would be appreciated, I will probably be doing this by myself like most of the other things on this car that needed maintenance or replacement (im broke, but mechanically inclined).

Thanks very much guys. Have a nice day.
