It depends on your performance goals and your toleration for a loose converter. My focus is ¼ mile performance with decedent street manors so I went with a TCI 4000 converter. For all out drag use I would have gone with a 4400 stall. In any event I would not go with any less stall than a 3500.

With your 2.73's, a 3000 stall will work fine. I depends on what you are looking for. Personally, I would ditch the 2.73's for either 3.42's or 3.73's. After that, look for a 3500+ stall converter. I would choose either a Yank SS3600 or TCI SSF3500. The SS3600 will be a better daily driver and is lighter. The SSF3500 is no slouch either and will perform great. The 3.42's will give you a nice bump in performance and will not rev as high a 3.73's. I drive my car on the highway a lot and the 3.42's are very nice.
