That's totally normal. The cold weather affects the hydraulic fluid like any other fluid in the car; makes it thicker. As a result, the first few times you work the clutch, it'll feel kinda funny. I live at 7,000ft where sometimes the car will see sub-zero temps just sitting outside. If I'm forced to drive the car, I just pump the clutch pedal a few times before starting the car just to get rid of that stupid feeling.
As far as it being tougher to put into gear... same deal with the tranny fluid. Overnight, all the fluid drains down into the bottom of the tranny and just needs a bit to circulate around, get warmed up, and cover everything. I go easy with the shifting for the first few miles just to be sure I don't "hurt" it or do anything that might lead to damage down the road.
In short, you have nothing to worry about.
