Shims & head gaskets

Shims & head gaskets
My pistons are coming out of the block .015" (block was decked) so I now need to get thicker gaskets.
While looking for thicker head gasket choices, I noticed several of the big head gasket companies offer stainless steel shims (.015, .010...) Are these used instead of head gaskets, or are they used with the head gasket?
They're fairly inexpensive, like $7.50 for the felpro shims. If these could be used in addition to the head gasket, then I could keep my existing .040" cometics and get a set of .015 shims for $15.
