would the recommended notching size for a 2.02 valve be the 2 1/16 cutter?

Yeah that should be good... Its not quite a .050 margin of error, but it shoudl be fine. The valve will actually have moved away from the side as the piston moves down (P to V is not closest at TDC like many people think)
