What pistons do you have and how much are they in or out of the hole?
At a guess of 2cc valve relieves and pistons at 0 deck I would defentially go with the .040 gaskets.
Why are you switching heads?
You really thing there is that much power to be gained?
If I were switching heads and taking AFR's off I would defentially have done a 4"bore ETP LS7 head so I could have a head that flows 360+ with a manifold that can almost keep up with the heads.
I think what your doing is a lot of work for little gain.
Hopefully for your sake I am wrong.
