Oil Pressure issues with new engine...
New pickup to oil ring gasket, ARE ported oil pump
installed perfect far as I can tell.
so this is the problem... when Its cold the Oil pressure is fine like 60psi @ 2k and above stays around there when your driving. Then as the engine heats up it drops to 38-40psi on the guage. Then at Idle psi is 20 hot and goes to 40-50psi while driving.
This is down from the old engine
Also sometimes the needle sticks, wont move at all then JUMPs up to a higher psi and sticks again... acts all crazy. Also autotap show 0 volts when reading the oil pressure at all times. Bad sending unit?
I have one question, the plug with oring that goes into the back of the block... it was put in flush with the block. Is it supposed to go in deeper?
Is there a mechanical way to check the oil pressure to make sure of what I have?

Could be normal, depending on oil and viscosity but it sounds like an electrical gremlin, too.
To answer your other questions - the plug in the rear goes flush and GM has a mechanical gage that attaches where the oil filter goes to help diagnose actual pressure.

i am working on the oil filter housing to tap into it to test actual oil pressure , im having the same problem ( brand new oil pump )and before we get to crazy with repairs we are going to test the actual pressure , ill let you know , it should be a week , i have a feeling in my car its the oil pump pickup tube oring. i have a friend who has the ARE oil pump and he says when he gets on it it pegs , and normally he has above average oil pressure

25 psi is just too low for idle. A stock pump will make about 40 psi (hot)
Sorry to tell ya, but I bet it is the O ring....
