Default Engine temp. question.

Just bought a '98 SS last month. The seller did some mods to it but didn't tell me all of what was done. When driving or even idling, the temp guage sits just above 160F. Does that mean the seller changed the thermostat? How do I find out if he did? I believe stock is anywhere from 190-230F depending on weather conditions. Please correct me if I'm wrong.

Take it out. They waste your gas. Not much point. I have one.
