How much can I mill my heads??

How much can I mill my heads?? I have the 230/230 Pred-Z cam ready to install in the next few weeks & looks like I might just do a full rebuild. Assuming my new pistons valve reliefs are adequate, how far can I mill my heads without running into trouble? Not just P to V trouble, but also any alignment issues with intake, etc. Also, in this scenario, which head gasket should I run?
