Default 383 head gaskets?

I finally got my shortblock in its a 327 casting with eagle forged crank and h beams, and SRP -5cc pistons. Decked to zero and want around 11.5-12 :1 compression. I am putting AI's 200cc lt1 head with a 56cc chamber. What do you guys think? It is going all solid roller so I am looking to make power to about 7400 AI said.

I would speak with AI 1st but I always ran LT4 gaskets, with no issues and got a 11.25 to 1 comp based on my 6" rod, -16cc dished ARP piston and mild deck of the head. The calc. was done by Nu-tek when they were still in biz.

The FelPro 1074 is .039" thick and if your pistons are a zero deck height then that's .039" quench.
I get 12.3:1 compression ratio with the 56cc chamber and -5cc flat tops

That is one head gasket option. A thicker gasket would only lower your cr by a point or two.
