I currently have open longtube headers, and when i accelerate at about 2000-3000rpm theres a loud popping noise coming from the exhaust, this is annoying, can anyone help me out?

You get the noise while accelerating?

I have a similar noise, but I get it when slowing down. In that case, it is the car burning off extra gas.

Sounds like a plug or high voltage misfire under acceleration load, are the wires, coil and plugs in your sig new, seated and not burnt (against the headers). Had similiar problem that turned out to be corroded terminal on HV wire from coil to opti. If your opti is causing it I think you s/b seeing failure codes.
