3rd gear pop out...wtf So after a 3 year build, I finally got to drive the car, and 3rd gear doesn't always want to stay engauged...wtf? What am I looking at here?

Yeah one of those three is definitely on it's way out. I've got the same issue but it only happens on occasion when I'm off the throttle, so I just hold it there to keep it from popping out. That's how I "fixed" mine, haha.
