Am I correct on my tuning order?

Am I correct on my tuning order? Hey guys.
I recently purchased HP tuners and I've been reading up pretty extensively on tuning the past 2 weeks or so. My car is a cam only car, 2000 Ls1 and currently had a mail order tune from Futral motorsports.
I want to fine tune the current tune on the car...and am I correct in doing these basic steps?
Idle tuning. For now.. the car idles fine with minimum surging.
Dial in the MAF Table. I will use the guide I found on HP Tuners website.
And am I correct in thinking once the MAF table is dialed in.. I can throw the car on a dyno with a wideband and make adjustments to the PE table to fine tune the AFR, but only do this AFTER the MAF has been tuned.
