For some things there already are. With EFI LIVE and a Road Runner PCM you can set up the EFI LIVE software to TUNE things like VE while you drive with zero user input. It will even lock the cells from further changes when its happy they are stable.
Technically the same thing could be accomplished with commanded fuel and spark when used in conjunction with a dyno. EFI LIVE already has the ability to receive digital dyno data and a Road Runner can modify every single cell in the tune at will instantly. So what it does with all the data is up to the user. You just need to be inventive with your real time maps.
