Default VE tuning, good idea for any modded vehicle?

Would it be a good idea to tune the VE table on a modded vehicle so that just in case the MAF fails the tuning is relatively close?

On a stock car/truck I guess it's close enough but once you start putting mods on the VE of the engine changes so the tune would probably way off...right?

Just wondering.

Knowing what to log from a previous thread are there any good driving methods to hit alot of the data points needed to get a complete VE table?

Thanks
