Default VE Tuning question

I am planning on using the MAF once I get my LTFT's dialed in close to 0. I have a question though on how to modify the MAF table once the VE has been done.
To get the car in SD mode, all I did was copy the High Octane table to the Low Octane and disconnect the MAF (I did not diable codes because I wanted the visual reminder of the SES light to remind me).

I have the Calibration worksheet to automatically calculate the New MAF table and Idle from Black02SS.
For me to calibrate the MAF after I have the VE dialed in, do I reconnect the MAF, log some data with the PID's specified in the worksheet, then copy the results to the data tab, copy my current MAF table to the worksheet, then calculate and copy the results to the VCM Editor? What if the data doesn't change all that much, will this still result in my LTFT's remaining close to 0?

After my LTFT's are close to -4/+4 do I need to do anything to the High Octane / Low Octane table? Sorry for the long post but with my new cam install I would like to try and get some kind of good tune. Thanks.
