I use EFILive, but I would imagine HPT's would be similar.
The following are the minimum I log while SD Tuning:
Absolute Throttle Position
Base Efficiency Numerator (% error PID in EFILive)
Commanded Air Fuel Ratio
Engine Coolant Temp
Engine RPM
External Analog Voltage
Ignition Timing Advance for #1 Cylinder
Intake Air Temperature
Intake Manifold Absolute Pressure
Retard Due to Knock
Wide Band AFR 1
The less PID's you log, the faster you can collect data = more data samples

I usually log 24 (I just use the default settings, but add dyn cyl air)
But as TAQuickness pointed out... the less you log the quicker the updates
This is from HPTs help file:
Single Channel Dual Channel
1-6 Bytes 20 frames/sec 40 frames/sec
7-12 Bytes 10 frames/sec 20 frames/sec
13-24 Bytes 5 frames/sec 10 frames/sec
