A stock Holley 750 can work on just about anything from 400hp to about 600 hp depending on alot of variables.
The rule is to use max rpm and cubic inches to determine what you need, but most people get more carb than that says they need.
You can have a 750 main body that flows 800 cfm,
and of course you can have a 750 that is only pulling through 500 if that is all the motor will pull through,
I always like the 700 cfm holley, cause I felt it was not too much, not too little, for alot of motors out there.
You lose a little throttle response and the car will behave different if you have too much carb on it. I believe it cuts down on intake air speed velocity but I am no expert.
